May recipe of the month- Zucchini Bread with Cinnamon Streusel topping!
Cinnamon Streusel Ingredients:
1 cup all-purpose flour
1/2 cup brown sugar
1 stick butter
1 teaspoon ground cinnamon
1- small container (to melt butter)
1- medium sized mixing bowl
1- Fork
Directions:
1.) Heat butter in microwave until completely melted.
2.) Mix cinnamon into melted butter, stir well.
3.) Mix flour and brown sugar together in medium sized mixing bowl with fork until completely mixed.
4.) Stir butter/cinnamon mixture into mixing bowl, mix well with fork until completely mixed.
5.) Sprinkle mixture over bread batter immediately before baking.
Zucchini Bread Ingredients:
2- 8 x 4 inch baking pans
1- Blender/Food processor
1- Large mixing bowl
Non-stick spray or Crisco, whatever your preference
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 4 teaspoons ground cinnamon
- 3 eggs
- 1 cup vegetable oil
- 2 1/4 cups white sugar
- 4 teaspoons vanilla extract
- 2 large zucchinis
Directions:
1.) Grease and flour two 8 x 4 inch pans and preheat oven to 325 degrees F.- 2.) Blend whole zucchini on high in food processor until it is smoothie consistency, pour into mixing bowl.
- 3.) Beat eggs, oil, vanilla and sugar into the mixing bowl/zucchini mixture.
- 4.) Mix flour, salt, baking powder, baking soda, and cinnamon together into the mixing bowl/zucchini mixture.
- 5.) Pour batter into prepared pans.
- 6.)Sprinkle Cinnamon Streusel mixture over batter immediately before baking.
- 7.) Bake for 40 to 60 minutes, or until toothpick inserted in the center comes out clean.
- 8.) Cool in pan on rack for 20 minutes, then remove bread from pan, and cool completely.

- Nope. I used to when I lived in the basement. Having the t.v. on made me feel safer. Like a big girls night light. LOL

- To have my face washed, teeth brushed and cuddled up in a warm bed.

April recipe of the month: Sausage and Cheese Egg Bake
Ingredients:
- *2 cups shredded Colby Jack cheese
- *3/4 cup shredded Mozzarella cheese
- *2 packs sausage links (I used "Hormel Little Sizzlers")
- *3/8 cup all-purpose flour
- *12 eggs
- *2 cups milk
- *Mrs. Dash 1 tablespoon
- *Garlic Powder 1 tablespoon
- *Onion Powder 1 tablespoon
- *Salt & Pepper to taste
Directions:
*Fry sausage links in large skillet until thoroughly cooked. Drain and let cool on paper towels.
*Combine the cheeses; sprinkle into a greased 13-in. x 9-in. glass baking dish.
*In a bowl, combine the flour, eggs, milk, Mrs. Dash, garlic powder, onion powder, salt and
pepper.
*Cut sausages into bite sized pieces and spoon over the cheese into the glass baking dish.
*Pour over sausage mixture, sprinkle a handful of shredded cheese over the top; cover and
refrigerate overnight.
*Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees F for 35-45 minutes or until a knife inserted near the center comes out clean. Let stand for
5 minutes before serving.
*Again, I forgot to take an after pic! :(
March recipe of the month: Garlic Butter Chicken & Red Potatoes
Ingredients:
*1 bag of frozen chicken breasts (thawed)
*6 large Red Potatoes (Or really any potatoes of your choosing)
*1 1/2 sticks of butter
*3 Tablespoons Olive Oil
*2 Tablespoons Garlic Powder
*1 Tablespoon Onion Powder
*Salt & Pepper to taste
*9x13 glass baking pan
*Tinfoil
Directions:
*Heat butter in microwavable bowl until melted.
*Add Olive Oil, Garlic Powder, Onion Powder, Salt & Pepper to melted butter and stir.
*Cut potatoes into bite sized pieces, coat with butter mixture and spread in bottom of pan.
*Coat chicken with butter mixture and layer on top of potatoes.
* Cover pan with tinfoil and bake for 1 hour and 15 minutes at 350 degrees
* ENJOY!!!
Prep time: 15 minutes
Cook time: 1 hour & 15 minutes
